  • 1 cup (2 sticks, 8 ounces, 225 g) unsalted butter
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1 cup brown sugar, packed
  • 1/2 cup white sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 9 ounces of your favourite Lir chocolate bars, roughly chopped into chunks, about 2 cups

1. Preheat oven to 180°C
2. Brown the butter
  • Melt it in a medium sized, stainless-steel saucepan on medium heat, whisking frequently until you see small, browned bits at the bottom of the pan, then remove it from the heat and pour it into a clean bowl
  • You can skip this step if you’re tight on time – just start the recipe with room temperature butter if you do
3. Whisk together the flour, salt, baking soda, and cinnamon
4. In a separate bowl, beat together the browned butter and sugars until smooth
5. Add the eggs, beating after each egg
6. Add the vanilla extract and beat for 3 more minutes
7. Add the flour mixture to the wet ingredients, a third at a time
8. Stir in the chocolate chunks
9. Spoon out heaping tablespoons of cookie dough to lined baking sheet, about 2 inches apart
10. Bake at 180° for about 12 minutes, until the edges are golden brown
11. Let cool on the cookie sheet for 5 minutes, before removing the cookies to cool completely on a rack
