The Best Way to Celebrate National Chocolate Chip Cookie Day
August 4 is national Chocolate Chip Cookie Day, and what better way to celebrate than baking – and eating – the best chocolate chip cookies at home? We’re sharing the best chocolate chip cookie recipe from Simply Recipes so you can do just that. Even though it technically doesn’t use chocolate chips, we couldn’t resist the chance to up the ante and use our favourite Lir chocolate bars to make the most delicious, chewy, melty chocolate chunk cookies.
The beauty of these cookies is that you can customize the flavour to your preference by simply using a different Lir chocolate bar flavour to make your chocolate chunks. Fan of the freshness of mint chocolate? Try using our Dark Chocolate Mint Bar. Love the sweet and salty combination of salted caramel? Toss in some chunks of the Milk Chocolate Salted Caramel Bar.

Ingredients
- 1 cup (2 sticks, 8 ounces, 225 g) unsalted butter
- 2 1/2 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1 cup brown sugar, packed
- 1/2 cup white sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 9 ounces of your favourite Lir chocolate bars, roughly chopped into chunks, about 2 cups
Method
1. Preheat oven to 180°C- Melt it in a medium sized, stainless-steel saucepan on medium heat, whisking frequently until you see small, browned bits at the bottom of the pan, then remove it from the heat and pour it into a clean bowl
- You can skip this step if you’re tight on time – just start the recipe with room temperature butter if you do
4. In a separate bowl, beat together the browned butter and sugars until smooth
5. Add the eggs, beating after each egg
6. Add the vanilla extract and beat for 3 more minutes
7. Add the flour mixture to the wet ingredients, a third at a time
8. Stir in the chocolate chunks
9. Spoon out heaping tablespoons of cookie dough to lined baking sheet, about 2 inches apart
10. Bake at 180° for about 12 minutes, until the edges are golden brown
11. Let cool on the cookie sheet for 5 minutes, before removing the cookies to cool completely on a rack
